A new barbecue experience is coming to Poppy Bank Epicenter.
We’re transforming Victory House into something completely new. Executive Chef Bob Costarella is bringing his Red Eye Barbecue concept to Epicenter, featuring his expression of Texas-style smoked barbecue, made from scratch and cooked low and slow.
During the transition, our restaurant will operate on a limited menu starting Tuesday, September 1st. Follow along as we get ready to introduce Red Eye Barbecue.
IMPORTANT DATES:
Tuesday, September 1st — Victory House moves to a very limited menu.
Monday, September 7th — Victory House will be closing at 5pm for staff training.
Tuesday, September 8th — Victory House will be closed all day for staff training. Pizza by the slice will be available at Chuck’s Bar.
Tuesday, September 15th— Victory House will be closed all day for staff training. Pizza by the slice will be available at Chuck’s Bar.
Wednesday, September 16th— Victory House will be closed all day for staff training. Pizza by the slice will be available at Chuck’s Bar.
Our monument signs and the restaurant door decals have been updated with Red Eye Barbecue logos!
Bob Costarella and his team stockpile locally sourced organic applewood from the Martinelli Orchard in West Sonoma County.
We believe the quality of wood used to fuel the pit is one of the key foundational components to the process of making exceptional craft barbecue.
Hard work & love, the first two ingredients in every single thing Red Eye Barbecue does.
Internal signage and outdoor banners go up announcing that the arrival of Red Eye Barbecue is coming soon to Poppy Bank Epicenter.
Executive Chef Bob Costarella took his pitmasters and our Assistant Director of Operations Wes Skelton on a trip to Austin, Texas, to show the crew what Texas Barbecue really means. They experienced and learned about its origins, the tradition, and the dedication to the craft.
Back in 2014, Bob Costarella moved to Austin to learn the art of craft barbecue as an apprentice under renowned pitmaster Lance Kirkpatrick at Stiles Switch BBQ & Brew. Bob was able to introduce the team to his mentor and showed them his old stomping grounds where the journey truly started.
Additional stops included Leroy and Lewis Barbecue, Louie Mueller Barbecue, Micklethwait Barbecue, Interstellar BBQ, Barley Swine, Briscuits, KG BBQ, Kemuri Tatsu-Ya, Loro Asian Smokehouse, Odd Duck, and more.
Epicenter is proud to host Project Grad celebrations for local high schools. On the following nights, Victory House will close early for private events:
